Lately the kids have been sleeping in until 7:15/7:30am which is great because that means I too have been sleeping in. But trying to get all three of us fed, dressed and out the door by 8am can be tough.
These muffins have been making my mornings easier. I make a big batch once or twice a month and freeze them. Then each morning, I zap them in the microwave, dice a banana, pour some milk and breakfast is served.
Both kids love these muffins and they make those mornings when everyone gets a little extra sleep much easier.
