Oat and Honey Bars

Sometimes I look into our pantry and just have to use up the tiny little bit of some random ingredient that I still have in there.  This recipe was one of those times.  I was looking to make some more space in the pantry and found less than one cup of rice crispies cereal in a container.  

I am pretty sure none of us will eat rice crispies cereal unless it is in a yummy dessert so why was I saving such a small amount, I am not sure.  

I ended up turning it into Oat + Honey Bars which were very tasty and quickly gobbles up by all.  

Oat + Honey Bars

Ingredients:
1.5 C Oats
1/2 C Rice Crispies Cereal
3 Tbsp Cornmeal
1/4 Tsp Baking Soda
1/4 C Honey
2 Tbsp Coconut Oil
1/2 Tsp Vanilla
1 Tbsp Brown Sugar

Directions:
1. Preheat the oven to 350F. Line a 9x9 inch pan with tin foil and spray with non stick cooking spray. 
2. Combine the oats, rice crispies, cornmeal and baking soda in a large bowl. 
3. In a small bowl, add the honey and coconut oil and microwave for 30sec- 1 minute.  Mix to combine. Then add the vanilla and brown sugar.  
4. Add the wet ingredients to the dry bowl and mix to combine. 
5. Transfer to the baking pan and then press down to flatten. 
6. Cook for 20-25 minutes.  Let cool for 10-20 minutes before removing from the baking dish and cutting.
