Anything Goes Chili
We are headed into chili season around here.  This recipe is one that I have been using for years.  But each time I make it, it is just a little different.  

Depending on what we have on hand when I make this, sometimes there is extra onion or pepper.  Sometimes its fire roasted tomatoes, sometimes its white beans, it really is never the same.  
2 lb Ground Beef
1 Onion, diced
1 Pepper, diced
2 Garlic Cloves, minced
2 Tbsp Chili Powder
1 Tsp Oregano
1/4 C Red Wine Vinegar
1 Tsp Cumin
1 Tsp Hot Sauce
1 (28oz) Can Tomato Sauce
1 (14.5 oz) Can Diced Tomatoes
2 (15oz) Cans of Beans

1. In a large skillet, brown the ground beef, onion and pepper. 
2. Drain the beef. 
3. Combine all the ingredients in a large pan.  Stir well. 
4. Bring to a boil.  
5. Reduce heat and simmer for 1 hour.

  1. I got to 28 without having really eaten or cooked a chilli, but i made one with turkey mince last week and i'm a convert. its such a good comfort food, but relatively healthy (unlike my normal winter favourites!)

  2. Sounds about like my chili! I've made it with carrots and celery before, with tomatillos, with cinnamon or cocoa powder. It turns out well every time.
