Sometimes I am indecisive about dessert options. Do I want something with chocolate? Or how about cookies? Or nuts? What about sweet like caramel? See indecisive.
So I combined them all into this cookie bar. And it is so good. Trust me.
It has a little bit of everything in them and helps fill my cravings on my indecisive dessert evenings.
Caramel Walnut Chocolate Chip Cookie Bars
Ingredients:
Cookie Crust:
1 C Butter
1/2 C Sugar
1 C Brown Sugar
2 Tsp Vanilla
2 Eggs
1 Tsp Baking Soda
2 1/4 C Flour
2 C Chocolate Chips
Walnut Topping Layer:
4 Eggs
1 1/2 C Light Corn Starch
1 1/2 C Sugar
2 Tbsp Butter
2 Tsp Vanilla
1 C Walnuts, Chopped
1 1/2 C (11oz) Caramel Bites
Directions:
- Preheat the oven to 350F.
- Coat and flour a 9x13 pan.
- In a large bowl, cream the butter, sugar and brown sugar together.
- Add the vanilla, eggs and baking soda.
- Slowly stir in the flour and chocolate chips.
- Press the mixture into the pan.
- Bake for 20 minutes.
- Meanwhile, combine the eggs, cornstarch, sugar, butter and vanilla together.
- Stir in walnuts and caramel bites.
- Spread evenly on top of the baked cookie crust layer.
- Bake for 25 minutes.
- Enjoy.
