Baked Oatmeal Cups

I love making muffins.  I love the the convince of eating muffins.  I love simple breakfast options. 
These oatmeal muffins are all of that.  And they are really really yummy.  

Baked Oatmeal Cups

2 Eggs
1 Tsp Vanilla
2 C Applesauce
1 Banana
1/2 Maple Syrup
2 Tbsp Flaxseed Meal
1 Tbsp Cinnamon
3 Tsp Baking Powder
2 1/4 C Milk
5 C Oats
Optional Toppings: Raisins, Chocolate Chips, Walnuts, Fruit, Etc. 

  1. Preheat the oven to 350F. 
  2. In a large bowl, mix the eggs, vanilla, applesauce, banana and maple syrup together. 
  3. Add in the flaxseed meal, cinnamon, baking powder and milk. 
  4. Slowly mix in the oats.  
  5. Add the oat mixture to muffins cups.  
  6. Add the toppings of your choice. 
  7. Bake for 30 minutes. 
  8. Enjoy.

    1. Oops. That should have been a 1/2 C of Maple Syrup. I'll fix the directions.
