I love potatoes in soup. Potatoes and hamburg. Yum. This recipe does not let me down either.
I love that this soup is stocked full of vegetables, rice and hamburg... but isn't super heavy.
1 lb ground beef
1 C chopped onion
1 C diced peeled potatoes
1 C sliced carrots
2 (14 oz) cans diced tomatoes, undrained
1/4 C uncooked rice
3 C water
1/4 tsp basil
1/4 tsp oregano
1/2 tsp italian seasoning
1. In a large saucepan, cook the ground beef and onions over medium heat until meat is no longer pink.
2. Drain the meat.
3. In a large saucepan, add the beef and remaining ingredients.
4. Mix well.
5. Cover and simmer for 1 hour or until the vegetables are tender. Stir occasionally.
Makes 8 servings (2 quarts).
