Breakfast Omelet Muffins
I saw this recipe on Pinterest and was intriqued.  These breakfast omlets make a perfect quick breakfast for those rushed mornings. 

I make a batch of 12 at a time and then freeze them.  In the morning just pop them in the microwave to reheat.  Perfect for those days you are running late and starving!

Ingredients:
¾ C Shredded Cheese
1 ½ C Chopped Onions and Peppers 
1 Hamsteak, diced 
9 Eggs
¾ C Milk

Directions:
1. Preheat the oven to 350F. 
2. In a medium bowl, mix the shredded cheese, onions, peppers and ham together. 
3. Divide this mixture between 12 muffin cups. 
4. Mix the eggs and milk together. 
5. Pour the egg mixture into the muffin cups. 
6. Cook at 350F for 45 minutes. 
7. Enjoy. 
If you are going to freeze them, let cool completely before packaging in ziplock bags. 

These would also be yummy with sausage and mushrooms… Ah the possibilities.

  3. What a great idea!! I hard boil eggs every morning and grab 2 before leaving. This would be just as easy if I make them ahead. Might be trying this one out this weekend for my food prep!!
