Recipe: Vanilla Waffles

I am back with another breakfast recipe perfect for those busy mornings... These can be made ahead and froze... Just pop them in the toaster straight from the freezer!

Ingredients:

3/4 C Vanilla Yogurt
1/4 C Milk
2 Large Eggs
4 Tbsp Melted Butter
2 Tsp Vanilla
2 Tbsp Baking Powder
1 Tsp Baking Soda
1 1/2 C Flour

Directions:
1.  Mix the yogurt, milk, eggs, butter and vanilla together.
2. Add the baking powder, baking soda, and flour slowly.
3.  Stir until just combined.
4. Let stand 5 minutes.
5. Grease the waffle iron. Fill 2/3's full.  Bake as instructed on waffle iron.
6. Eat right away... Or cool completely, then separate with wax paper & freeze in a freezer bag.

These are a big hit with the little guy.  I love that the kitchen smells like vanilla each morning when these are toasted.

Edible Finger Paint

I have a toddler.  A toddler who tries to eat everything.  For example, the door jam on the way into the kitchen.  

For my Mom's birthday last month, I wanted Reid to finger paint/draw on white paper for the wrapping paper.... Then I thought about it.  He eats crayons. He would eat the finger paint.  

Enter... 

Edible Finger Paint. 

Ingredients:

Milk
Pudding Mix
Food Coloring

To keep it simple, I only made 3 colors.  Okay, all our food coloring leaked into a plastic bag when we moved last month, so we only had 3 colors. 
I set Reid up, sans clothing at the table, taped down the paper and poured some yellow pudding onto the paper.  
You know what that little stinker did, painted with it.  Not once did he try to eat it.  
I moved him around the table and hoped for the best with the green. 
Needless to say... my kids must eat all things green!
One he started tasting it, there was no stopping him. 
It was a little messy...
...but then again it was only pudding so the dogs cleaned up any drips. 

Reid had so much fun painting and Grandma really appreciated her one of a kind wrapping paper. 
Once we were done it was straight into the bath tub for Reid!

Recipe: Blueberry Muffins

I am always on a hunt for new breakfast and/or snack food for Reid.  When I came across a recipe for Blueberry Muffins in a recent magazine, I got to baking. 

Ingredients: (Makes 12 Muffins or 24 Mini Muffins)
1.5 Cups Flour
1/4 Cup Sugar
2 Tsp Baking Powder
1 Cup Whole Milk
1/3 Cup Vegetable Oil
2 Eggs
1 Cup (Fresh or Frozen) Blueberries

Instructions:
1. Preheat oven to 425F. 
2. Spray muffin pan with non-stick spray 
3. Combine the dry ingredients.
4. Mix in the wet ingredients slowly. 
5. Fold in the blueberries. 
6. Bake 15-18 minutes. 
7. Enjoy!

Cheerio Bird Feeder

Today, I am guest posting over at Sowdering About...

When Randi (a fellow January 2012 Mom) asked if I was interested in participating in her Kid's Summer Craft Camp, I said Yes!   Then, I realized I am not nearly as crafty as Randi... as you will see when you keep reading... but I try.

First off a few points about this project:

  • I have an 18 month old son, Reid.
  • Reid destroys everything
  • Reid also eats everything
Now, keep those three points in mind when reading about the craft project.

I decided to try our hand at making bird feeders.  I had grand plans of slathering pines cones in peanut butter and rolling them in bird seed... Then I thought it through.  1.  What if Reid eats the peanut butter and is allergic?  2.  What if Reid eats the bird seed?  I realized that project was kaput before it even began.

Spray Painting our Dining Room Chairs

1 Afternoon, 2 Hours, 3 Cans of Spray Paint and 4 Chairs

Our dining room walls are dark, dark blue.  I love it (for the most part).  However, after looking at our semi-dark table and chairs against the dark walls… I knew it was time for a change. 
I love our table and was eh about the chairs.  

They have taken a beating in the past 6 year and where starting to show a lot of wear.  We considered purchasing new chairs but didn’t want to spend the money quite yet.  
So enter that afternoon and 3 cans of spray paint.
I dragged everything outside, did a quick sand job and started spraying.  
After 2 light coats, I was out of paint and the chairs were covered in crisp white.  (Okay, so was some of the rose bush!)
Not bad for a couple hours and $10.  
The white chairs definitely brighten up the room and made for a quick (and cheap) change.
