I am always on a hunt for new breakfast and/or snack food for Reid. When I came across a recipe for Blueberry Muffins in a recent magazine, I got to baking.
Ingredients: (Makes 12 Muffins or 24 Mini Muffins)
1.5 Cups Flour
1/4 Cup Sugar
2 Tsp Baking Powder
1 Cup Whole Milk
1/3 Cup Vegetable Oil
1 Cup (Fresh or Frozen) Blueberries
1. Preheat oven to 425F.
2. Spray muffin pan with non-stick spray
3. Combine the dry ingredients.
4. Mix in the wet ingredients slowly.
5. Fold in the blueberries.
6. Bake 15-18 minutes.
