We had some ripe leftover banana's floating around the kitchen recently. Neil requested these muffins.
- Ingredients:
- 1-1/2 cups all-purpose flour
- 1 cup sugar
- 1/4 cup baking cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 1-1/3 cup mashed ripe bananas
- 1/3 cup vegetable oil
- 1 egg
- 1 cup (6 ounces) miniature semisweet chocolate chips
The recipe only makes 12 muffins.
Bake at 325F for 20-25 minutes.
Those look great!! I especially love things with banana baked into them!

Hmmm...can I leave the banana out? I'm sure my hubby and daughter will love them but I am not a fan of baked banana...
