Recipe - Almost A Candy Bar

25 May 2011

If the name of the recipe doesn't intrigue you enough, check out the ingredient list.  Neil has renamed these "Take 8's".
1 tube - 16.5oz refridgerated chocolate chip cookie dough
4 s'mores trail mix bars (5 oz total)
11 ounces butterscotch chips
2 1/2 cups mini marshmellows
1 cup chopped walnuts
1 1/2 cups crushed pretzels
1 1/2 cup peanut butter
3/4 cup light corn syrup
1/4 cup butter
12 ounces chocolate chips

1. Let cookie dough stand at room temperature for 5-10 minutes to soften.  Meanwhile break/crush the trail mix bars.
2. In a large bowl, combine dough and trail mix bars.
3. Press the batter into a 13x9 pan.  Bake uncovered at 350f for 10 minutes.
4. Sprinkle with butterscotch chips and mini-marshmallows.  Back for 5 minutes.
5. Sprinkle with walnuts then pretzels.
6. In a small sauce pan, combine the peanut butter, corn syrup and butter.  Melt and stir until smooth. Spoon over the bars.  Let cool for 10-15 minutes.
7. Melt the chocolate chips.  Stir until smooth.  Spoon the chocolate over the bars.
8. Refrigerate at least 1 hour before cutting. Makes 5 dozen.

My pictures definitely do not do this yummy treat justice.  Trust me it is good!

Book Review - Think Twice

18 May 2011

Well 11 hours of travel means some good reading... I started and finished Think Twice by Lisa Scottoline.

According to Goodreads...
Unbeknownst to her identical twin Bennie Rosato, Alice Connelly is on the run from her drug-dealing confederates who are trying to kill her. Alice sees only one way out - to become Bennie. She slips a drug into her drink, and usurps her life. Not only does she sleep with her boyfriend, impersonate her at work - and steal her money, but she also warns the police that her evil twin is out to get her. Her plan works perfectly, because when Bennie emerges to fight back, everyone thinks she's Alice - including the police. Meanwhile, Mary DiNunzio, distracted by personal problems is also duped by Alice. The happy DiNunzio home is disrupted by the arrival of a sexy and mysterious cousin who claims to be a witch - and manages to put Mary's father under her spell! Bennie, with everything at stake, is fighting for her life - on all levels. She's reached breaking point. But when the chips are finally down, what will she do? Is blood thicker than water, and can an ordinary, law-abiding woman be driven to evil?

It was an interesting and quick read.  The first half or so I wasn't sure how the story was going to go, but the later half of the book was slightly predictable.  I still enjoyed the book and would recommend it.  Rating: 3.5 stars.
