Recipe - Southwest Bean Soup

I saw this recipe in a magazine a while ago.  I thought it sounded like a yummy soup for the husband.  He was kind of leary... Seeing there was no meat in it.  With a few adjustments, turns out he liked it!

2 large onion, chopped
2 bell pepper, chopped
6 garlic cloves minced
45 oz beef broth
30 oz black beans
45 oz diced tomatos
8 oz chopped green chilies
2 cups frozen corn
2 Tsp chili powder
1 Tsp cumin

1. Cook onions, peppers and garlic in a large saucepan.
2. Add all the remaining ingredients.  Bring to a boil.  Reduce heat, cover and simmer for 30 minutes.  Makes about 12 cups.

Each cup is only 3 WW ProPoints.

  1. That sounds really good! You could even make it less soupy by adding less broth and pretend it's chili. I'm trying this one :)
